- Wash and drain rice.
- Set aside.
- Saute onion and garlic in olive oil until soft.
- Add tomatoes, rice, salt, pepper and water or broth.
- Bring to a boil.
- Bring heat to medium.
- Cook until all bubbles on surface have disappeared.
- Cover and cook on low heat for 20 minutes.

- BRAZILIAN BANANA CAKE
- Preheat oven to 350 degrees.
- Grease a 9x13 inch pan.
- In a large bowl, mix together margarine and sugar until smooth.
- Mix in yolks.
- Stir in flour and baking powder alternately with the milk.
- In another bowl, beat egg whites until doubled in volume.
- Fold beaten whites into the dough.
- Spread into a greased 9 x 13 inch pan.
- Slice bananas over the top of the dough.
- In a small bowl, mix together the 2 tablespoons sugar and the cinnamon; sprinkle over bananas.
- Bake at 350 degrees for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool.
- REFRESHING BRAZILIAN LEMONADE
- Divide all ingredients half. Cut off ends of each lime and cut each into 8 wedges.
- Place one half of the ingredients in a blender & blend for 20 seconds - NO LONGER! Strain, to remove peel then pour onto a pitcher.
- Blend & strain the remaining half of the ingredients & add pitcher.
- Mix well & serve immediately over ice.
- BRAZILIAN LEMONADE
- Wash limes thoroughly. Cut off the ends and slice into eight wedges. Place limes in a blender with the sugar, sweetened condensed milk, water, and ice.
- Blend in an electric blender, pulsing 5 times. Strain through a fine mesh strainer to remove rinds. Serve over ice.
- POTATO SALAD
- Bake six potatoes for 1 hour 400°F
- Cool, peel and cut in small dices. Place in bowl. Dice, onions mix with potatoes.
- Add mayonnaise, vinegar, salt and pepper to onion and potato mixture.
- Mix with fork (do not mash) , all ingredients. Use less pepper if desired.
- Refrigerate until served
